Back in 2005 GridironGourmet, a tailgating inspired cooking show, was born while I was cheering forthe Atlanta Falcons. For each show guests would join me in the kitchen to cookone of their favorite recipes. StephanieBlank was scheduled to make one of Arthur Blanks favorite recipes on theshow. She had emailed me the list ofingredients to show prior however didnt send any instructions. A last minute ear ache kept her from filmingwith us so we created our own recipe.The enchiladas turned out phenomenal and I have been making them eversince.
They are a greatrecipe if you want to cook in advance or if you like leftovers these make aton.

Afew shakes of the following (use more or omit some, your choice):TonyChacheres SeasoningGarlicPowderCuminCorianderPaprikaChiliPowderSaltPepper1-2cups shredded Mexican cheese blend8oz low fat cream cheese&8232;1large jar of red salsa&8232;1large jar of green salsaWholewheat tortillas&8232;OliveOil&8232;Saltand Pepper&8232;Cookingspray
&8232;Saut sliced onions in about 2-3T olive oilunder tender (about 15 minutes)&8232;&8232;.Mix 34 cup (give or take) olive oil andspices in glass dish and mix. Should bejust shy of a paste, more oily than paste is what you want. Add chicken and turn a few times to coat andbake at 350 degrees for 20 minutes or until done. Internal temperature should be 165 degrees(there will be a little carry over cooking time while chicken cools). Cool chicken and slice then add back to oilmixture with spices and toss to coat. At the same time melt cream cheese and 23of both jars of salsa in a pan over med heat until blended. &8232;&8232;Spray a casserole dish with cooking sprayand spoon some of the&8232; salsa mixture into the bottom of dish so enchiladasdon't stick. Begin to make enchiladas; take tortilla add onions, chicken, cheese and&8232;top with salsa mixture, roll up and place in casseroledish&8232;.Once in the casserole dish, top enchiladaswith remaining salsa and more cheese&8232;.Bake in 350 degree oven for 10-15 minutes oruntil cheese is melted.
